Eggplant "Stuff"
Eggplant "Stuff" is an moderately easy dinner. Made with 1 medium eggplant, 1 c. seasoned bread crumbs, 2 eggs, 1 tbsp. basil and 1 tsp. garlic, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Eggplant; cut in 1-inch chunks.
Boil in slightly salted water transparent.
Drain.
In large bowl fork blend 2 eggs.
Add drained eggplant and mix to coat eggplant. Add 1 cup bread crumbs, herbs and mix.
In a bread tin layer eggplant, top with a layer of sliced mushrooms, tomatoes and cheese.
Repeat layers
(eggplant, mushrooms, tomatoes and cheese).
Bake covered
350Β° for 20 minutes.
Uncover and bake an additional 10 to 15 minutes.
Slice using a spatula.
