Eggplant Italiano
Eggplant Italiano is an easy dinner. Made with 1 medium eggplant, 2 cans (8 oz. each) tomato sauce, 1 to 2 tsp. oregano, 1/2 c. shredded sharp cheese and 1 pkg. mozzarella cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Pare eggplant and slice 1/8-inch thick.
Spread 2 tablespoons tomato sauce in bottom of 2-quart casserole.
Layer half of eggplant, 1 can tomato sauce, half of oregano and half of sharp cheese.
Repeat layers; cover dish.
Place in microwave and cook 14 to 16 minutes.
Add Mozzarella cheese and continue to cook 1 to 2 minutes until cheese has melted.
