Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1/2 stick oleo, 1 c. cooked eggplant, 1 c. grated, medium cheese, 1 c. crushed saltines and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt the oleo in a 1 1/2-quart baking dish.
Mix rest of ingredients together and place in baking dish on top of the oleo. Top with a little grated cheese.
