Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 eggplant, peeled and chopped, 1 onion, chopped, 1 (8 oz.) can tomato sauce, 1/2 c. cottage cheese and 2 medium tomatoes, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Saute eggplant and onion in large skillet until tender.
Stir in tomato sauce, cottage cheese, tomatoes, marjoram and pepper. Spoon into greased 9 x 13-inch baking dish.
Bake at 325Β° for 35 minutes.
