Eggplant Casserole
Eggplant Casserole is an easy dinner. Made with 2 eggplant, 2 tsp. onion flakes, 1 can mushroom soup, ritz crackers and grated cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Slice and boil 10 to 15 minutes in salt water.
Drain.
Put one layer of eggplant in baking dish.
Add one layer of cracker crumbs.
Sprinkle 1 teaspoon onion flakes over crackers.
(Can use fresh onions, chopped.)
Repeat layers.
Pour can of mushroom soup over all other ingredients.
Can mix or just leave soup on top.
Sprinkle cheese on top.
Bake for 30 minutes at 325Β°.
