Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant, 1 1/2 c. grated sharp cheese, 1 1/2 c. cracker crumbs, 1 1/2 c. milk and 4 eggs, slightly beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook eggplant until tender.
Add all other ingredients except 1/2 cup cheese, 1/2 cup cracker crumbs and a little melted butter. Mix well and put in baking dish.
