Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant, peeled and sliced, 4 eggs, beaten, 1/2 tsp. pepper, 1 1/2 c. milk and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook eggplant until mushy; drain well.
Add all ingredients. Reserve 1/2 cup cheese, 1/2 cup cracker crumbs and small amount of butter; mix well.
Pour in greased baking dish.
Sprinkle with reserved cheese, cracker crumbs and melted butter.
Bake at 325° to 350° for 25 to 30 minutes.
Makes 6 to 8 servings.
