Eggplant Appetizer is an moderately easy dinner. Made with 3 eggplants, 1/2 stick oleo, 1 tsp. chopped garlic, small amount olive oil and 1/4 c. romano cheese, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cut eggplants in quarters.
Peel and boil until tender.
Remove seeds.
Mash or slice.
Set aside.
Saute garlic in olive oil and oleo.
Add eggplant.
Fry until brown.
Add pepper cheese and Salad Supreme.
Serve warm with crackers or Melba rounds.
