Easy Onion Soup
Easy Onion Soup is an moderately easy dinner. Made with 2 large onions, 2 tbsp. butter or margarine, 3 (10 1/2 oz.) cans condensed beef broth, 4 oz. swiss or cheddar cheese, shredded and 3 tbsp. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. Cut each onion in half from stem to root, then slice thinly crosswise.
Cook onion and butter covered on high 15 minutes, stirring twice.
Add undiluted beef broth and 1 cup water.
Cook covered on high 10 minutes.
Meanwhile, mix cheese and parsley. Arrange toast on baking dish.
Sprinkle with cheese mixture.
Bake just until cheese melts.
Ladle soup into 4 soup bowls.
Top each with toast slice.
