Easy Caramel Popcorn
Easy Caramel Popcorn is an moderately easy dinner. Made with 3 quarts popped corn, 1 cup packed brown sugar, 1/2 cup karo light or dark corn syrup, 1/2 cup margarine and 1/2 teaspoon salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 250 degrees.
Place popped corn in large roasting pan; let stand in oven while preparing glaze.
In medium saucepan combine brown sugar, corn syrup, margarine and salt.
Stirring constantly, bring to a boil over medium heat.
Without stirring, boil 4 minutes.
Remove from heat; stir in baking soda and vanilla.
Pour over warm popcorn; toss to coat well.
Bake 60 minutes, stirring every 15 minutes.
Cool, stirring frequently.
Store in tightly-covered container.
Makes about 3 1/2 quarts.
