Dutch Apple Rice Pudding
Dutch Apple Rice Pudding is an moderately easy dinner. Made with 3 c. hot cooked rice, 2 c. applesauce, 3/4 c. firmly packed brown sugar, 6 tbsp. margarine, melted and 1/4 c. raisins (optional), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In medium bowl, combine rice, applesauce, 1/2 of sugar, 2 tablespoons of butter, raisins and vanilla; set aside.
In another bowl, combine cracker crumbs and coconut with remaining sugar and 4 tablespoons butter; mix well.
In a buttered 2-quart casserole, sprinkle of the crumb mixture. Pour in all mixture; sprinkle with remaining crumbs.
Bake in a preheated 350Β° oven for 25 minutes or until top golden. Serve with apple slices or ice cream. Makes 8 servings.
