Dried Apricot-Pumpkin Bread
Dried Apricot-Pumpkin Bread is an impressive dinner. Made with 1 1/2 c. canned pumpkin, 1 c. sugar, 1 c. oil, 3 large eggs and 2 1/4 c. flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 350Β°. In large bowl, combine pumpkin, sugar, oil and eggs until well blended.
In a separate bowl, combine flour, baking soda, baking powder and spices.
Add to pumpkin mixture and blend.
Fold in pudding mix.
Stir in apricots and nuts.
Pour into greased 8 1/2 x 4 1/2 x 2 1/2-inch bread pans.
Bake 1 hour or until tester inserted in center comes out clean.
Cool 10 minutes; remove breads to wire rack.
Makes 2 loaves.
