Diabetic-Fruit Medley Salad is an moderately easy dinner. Made with 1 envelope (1 tbsp.) unflavored gelatin, 1/2 c. unsweetened orange juice, 1 1/4 c. boiling water, 1/4 tsp. salt and 1 1/4 tsp. liquid sweetener, this recipe delivers authentic, satisfying flavors. In a medium mixing bowl, soften gelatin in orange juice.
Stir in boiling water, salt and liquid sweetener.
Chill until slightly thickened, but not set.
Carefully stir in fruit.
Pour into 3 or 4-cup mold or 6 individual molds.
Chill until set, about 4 hours. Serves 6.
