Depression Potato Soup
Depression Potato Soup is an moderately easy dinner. Made with 4 to 5 medium potatoes, 1/2 stick butter or margarine, 1 medium onion, 2 tbsp. vinegar or lemon juice and 1/2 tsp. black pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Saute chopped onion in butter or margarine until slightly brown.
Add cubed potatoes, water to cover and salt.
Cook until tender and add enough milk to make it soupy.
Thicken by making a paste of flour and milk or you can mash some of the potatoes against the side of the pan.
Add vinegar or lemon juice.
Taste it.
Add pepper.
If you want, add cooked green beans.
