Dennis Walker's Irish Soda Bread
Dennis Walker'S Irish Soda Bread is an moderately easy dinner. Made with 1 c. raisins, 2 c. sour cream, 2 eggs, 1 c. sugar and 4 c. sifted flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Mix together the raisins, sour cream and eggs.
To this mixture add the sugar, flour, baking powder and baking soda.
Mix well.
Batter will be stiff.
Divide batter into two greased loaf pans.
Sprinkle with caraway seed.
Place on lower shelf of a 350Β° oven for 30 minutes, then place on higher shelf for remaining 20 minutes or until golden brown.
Test with a toothpick.
(I substitute light sour cream and egg substitute.)
Makes 2 loaves.
