Deep South Pie
Deep South Pie is an moderately easy dinner. Made with 1 c. cooked rice, 1/4 c. butter or margarine, 3/4 c. molasses, 1 c. sugar and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook rice until very soft (at least twice as long as customary).
Drain and mash with a fork.
Melt butter in a large saucepan.
Stir in molasses, sugar, eggs, salt, vanilla and rice; pour into pie shell.
Sprinkle pecans evenly over the top.
Bake in a moderate oven (375Β°) for 50 minutes.
Cool before serving. Makes one 9-inch pie.
