Date Refrigerator Pinwheels
Date Refrigerator Pinwheels is an moderately easy dinner. Made with 2 1/4 c. cut-up pitted dates, 1 c. sugar, 1 c. water, 1 c. chopped nuts and 1 c. shortening, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine dates, sugar and water and cook over low flame until thick (about 10 minutes).
Add nuts and cool.
Meanwhile, cream shortening until fluffy; add brown sugar gradually while continuing to cream.
Add well beaten eggs.
Mix well.
Add remaining ingredients sifted together and mix well.
Chill thoroughly.
Divide mixture into 2 parts and roll each out separately into a rectangle 1/4-inch thick.
Spread each half with half of date filling and roll as for jelly roll into 2 long rolls. Chill overnight.
Cut with sharp knife into slices 1/4-inch thick.
Bake on greased sheet at 400Β° for 10 to 15 minutes.
