Dark Raisin Bread
Dark Raisin Bread is an moderately easy dinner. Made with 1 c. boiling water, 1 1/2 c. raisins, 2 tsp. baking soda, 1 c. bran cereal and 1 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Pour boiling water over raisins and soda in large bowl; let cool.
Mix dry ingredients in separate bowl.
When cool, add beaten egg and oil to raisins and water.
Add dry ingredients and mix until wet (do not overmix).
Equally pour into 3 greased 1 pound cans or loaf pans and bake at 350Β° for 45 minutes.
Cool for 20 minutes and remove onto rack, until cold.
Wrap in foil and keep in refrigerator.
Bread will keep for months if kept tightly wrapped.
