Custard Rice Pudding
Custard Rice Pudding is an moderately easy dinner. Made with 1/4 c. rice, 2 c. milk, 2 eggs, separated, 6 tbsp. sugar and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Wash and drain rice and add to milk and cook covered for 15 to 20 minutes until tender.
Beat egg yolks thoroughly.
Add 3 tablespoons sugar and the salt.
Mix in some hot rice mixture and then add to remaining rice mixture.
Cook, stirring for 2 minutes. Remove from heat.
Add sherry.
Beat egg whites until foamy and add remaining 3 tablespoons sugar.
Beat until stiff. Add to rice mixture.
Chill and serve.
