Curried Couscous Salad
Curried Couscous Salad is an impressive dinner. Made with 1 lb. chicken, cooked and cubed, 10 oz. couscous, cooked and cooled, 1 red pepper, diced, 1 c. shredded carrot and 1 c. cooked peas, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook chicken; cool and dice.
Cook couscous and cool.
Combine chicken, couscous, carrots, peas, red peppers and green onions. After soaking raisins in orange juice, drain and add raisins to couscous, reserving orange juice.
Combine vinegar, orange juice, curry, mustard, salt and pepper.
Shake or blend thoroughly.
Add oil and blend.
Pour over couscous and toss.
Chill until serving.
