Cucumber Soup
Cucumber Soup is an moderately easy dinner. Made with 3 large cucumbers, 2 tbsp. oleo, 3 tbsp. flour, 3 c. chicken stock and 1 c. scalded milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Peel and slice cucumbers.
Cook in oleo 10 minutes over low fire, stirring often.
Stir in flour and then gradually add chicken stock, stirring constantly.
Add milk and onion.
Simmer slowly 10 minutes, stirring often.
Cool slightly and put through blender or food processor with half and half and salt and pepper (do in batches if necessary).
Chill thoroughly and serve cold with chopped chives for garnish.
