Cucumber Salad is an moderately easy dinner. Made with 1 small pkg. lime jello, 3/4 c. hot water, 1 small carton cottage cheese, 3/4 c. grated cucumber and 2 tbsp. grated onion, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Dissolve jello in hot water.
Add all other ingredients and mix well.
Pour into mold and let set.
When turning out of mold (if using ring mold), fill the center with cranberry sauce or relish.
