Cucumber Pickles
Cucumber Pickles is an moderately easy dinner. Made with 7 lb. cucumbers, washed and cut, 2 gal. water, 2 c. pickling lime, 6 lb. sugar and 3 qt. vinegar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Dissolve lime in water.
Soak cucumbers for 24 hours.
Rinse and soak in cold water 4 more hours, changing water every hour.
Heat sugar, vinegar, pickling spice and cinnamon just until sugar is melted.
Cool and soak cucumbers overnight in mixture.
Simmer gently for 30 minutes.
Remove spices and add turmeric just before packing into jars.
