Cucumber Apple Rings
Cucumber Apple Rings is an moderately easy dinner. Made with 2 gal. cucumbers, 2 c. pickling lime, 8 1/2 c. cold water (enough to cover), 1 c. vinegar and 1 tbsp. alum, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Use large cucumbers, even if they are turning yellow. Peel and slice 1/2 inch thick and remove seeds. Combine cucumbers, lime and water. Soak for 24 hours; drain and wash well. Cover with ice water and soak for 3 hours.
Important to drain well. Add 1 cup vinegar, 1 tablespoon alum and 2 bottles food coloring. Add enough water to cover cucumbers. Put on stove and simmer (do not boil) for 2 hours. Drain and throw away water.
