Creole Style Lentils
Creole Style Lentils is an moderately easy dinner. Made with 1/2 c. chopped carrots, 1/2 c. chopped celery, 1 large onion, chopped, 2 tbsp. margarine and 1 (16 oz.) can tomatoes, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook carrots, celery and onion in hot margarine in medium size saucepan until lightly browned, about 10 minutes.
Add tomatoes, salt, sugar, pepper, pepper sauce and lentils.
Cover; simmer for 30 minutes, stirring occasionally.
Serve over rice.
Makes about 5 1/2 cups.
