Creole Meat Loaf
Creole Meat Loaf is an moderately easy dinner. Made with 1 1/2 lb. lean ground beef, 1/2 c. each: cooked rice, chopped onion and bell pepper, 1 tsp. salt, 1/2 to 1 tsp. thyme and 1 egg, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 350Β°.
Mix ground beef, rice, onion, bell pepper, salt, thyme and egg.
Add 1/2 can tomato sauce.
Blend. Shape into loaf.
Bake 1 hour.
Pour off fat.
Meanwhile, heat oil and cook celery until tender.
Add remaining 1 1/2 cans tomato sauce.
Add parsley.
Simmer over low heat while baking meat loaf. After pouring off fat, top loaf with sauce.
Return to oven and bake for 10 minutes.
Serves six.
