Creole Fish Orleans
Creole Fish Orleans is an moderately easy dinner. Made with 1/4 c. promise margarine, 1 large onion, chopped (1 c.), 1/2 c. sliced celery, 1 tsp. minced garlic and 1 (16 oz.) can 50% less salt tomatoes (undrained), cut in pieces, this recipe delivers authentic, satisfying flavors. In large skillet, melt Promise; saute onion, celery and garlic 3 minutes.
Stir in tomatoes, bay leaf, Worcestershire sauce, salt and hot pepper sauce.
Simmer 15 minutes or until thickened.
Add mushrooms.
Roll fillets.
Arrange in sauce.
Cover.
Cook 10 minutes longer or until fish is done.
Remove fish to serving platter.
Remove bay leaf from sauce; discard.
Spoon sauce around fish; sprinkle with parsley if desired.
