Creole Black-Eyed Peas
Creole Black-Eyed Peas is an impressive dinner. Made with 1 (16 oz.) pkg. dried peas, 1/2 lb. salt pork, 3 c. chopped onion, 1 c. chopped parsley and 1 c. chopped bell pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Sort and wash peas.
Place in Dutch oven.
Cover with water. Soak overnight.
Drain peas.
Add pork.
Cover with water.
Cover and cook 45 minutes.
Add all other ingredients except sausage. Cover and cook
1 1/2 hours.
Stir occasionally.
Add sausage. Cook, uncovered, over low heat 45 minutes.
Serve over cooked rice.
Serves 10.
