Creamy Sweet Potato Pie
Creamy Sweet Potato Pie is an moderately easy dinner. Made with 4 large sweet potatoes, 1 stick margarine, softened, 2 c. sugar, 4 eggs and 1/2 tsp. nutmeg, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Peel sweet potatoes and boil until done.
Let cool.
Place potatoes in large bowl and mix until smooth, adding butter and sugar.
Beat in eggs one at a time.
Add nutmeg, salt and milk. Mix well.
Pour into unbaked pie crusts.
Preheat oven to 425°. Bake pies for 20 minutes.
Lower heat to 325° and bake for 30 to 45 minutes longer or until knife inserted near center comes out clean.
Cool before serving.
