Creamy Potato Cups
Creamy Potato Cups is an moderately easy dinner. Made with 5 medium red bliss potatoes, 6 tbsp. margarine, salt and pepper, 1/4 tsp. minced onion and 1 egg, well beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel, cut and boil potatoes in water until soft.
Drain. Add salt and pepper to taste.
Add margarine and minced onion. Mash well.
Add half of evaporated milk.
Beat well.
Add well beaten egg.
Add remaining evaporated milk.
Whip until creamy and fluffy.
Potato shaped individual tinfoil pans, fill each with potatoes and top with cheese. Sprinkle with paprika. Bake in 350Β° preheated oven for approximately 10 minutes or until cheese is slightly brown. I serve these with grilled steaks or barbecue chicken. They are a family favorite.
