Creamy Piña Coladas
Creamy Piña Coladas is an moderately easy dinner. Made with 1 fresh pineapple, 2 c. vanilla ice cream, 1 (8 1/2 oz.) can cream of coconut, 3/4 c. light rum (optional) and 1 large banana, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Peel and trim eyes from pineapple; remove core.
Cut pineapple crosswise into 1/2-inch slices; quarter the slices.
Position knife blade in food processor bowl; add half of pineapple and replace processor cover.
Process for 25 seconds or until pureed. Add half each of next 4 ingredients; process until smooth.
Add half of ice, processing until mixture reaches desired consistency. Repeat procedure with remaining ingredients.
Garnish each serving with coconut, if desired.
Serve immediately.
Yield: about 10 cups.
