Creamy Chicken Soup
Creamy Chicken Soup is an moderately easy dinner. Made with 3 qt. chicken stock, 3 bay leaves, 4 onions (reserve 2), 6 stalks celery (reserve 3) and 5 carrots (reserve 3), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Make stock using whole chicken parts.
Simmer about 1 1/2 hours.
Strain liquid and put back in pot.
In food processor, process reserved onions, carrots and celery separately.
Bring liquid to a boil and add vegetables plus 3 to 4 tablespoons of small pasta (orzo).
Continue cooking about 15 minutes.
Make a roux with 3 to 4 tablespoons flour and 3 to 4 tablespoons margarine.
Add to the simmering soup.
Add chicken and serve.
