Cream of Artichoke Soup
Cream Of Artichoke Soup is an moderately easy dinner. Made with 3 (10 oz.) pkg. frozen artichoke hearts or 4 c. fresh artichoke hearts, 3 c. chicken stock, 1 c. milk (low-fat is fine), 1 c. half and half and 1 tbsp. butter, this recipe delivers authentic, satisfying flavors. Cook artichokes as package directs.
Set a few artichoke hearts aside.
Blend the rest with stock until smooth.
Return to pot and add milk, half and half, butter, salt and pepper.
Heat but do not boil.
Chop remaining artichoke hearts and stir into soup.
