Crawfish Fettucini
Crawfish Fettucini is an impressive dinner. Made with 3 medium onions, finely chopped, 3 celery ribs, finely chopped, 2 bell peppers, finely chopped, 1 c. (2 sticks) margarine and 1/4 c. flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Using a big pot, saute onions, celery and bell peppers in margarine.
Mix flour with a little water and add to onion mixture.
Cover and cook on low heat for 15 minutes.
Add parsley, garlic, crawfish, half of the Velveeta cheese, relish, salt and pepper.
Cook for 30 minutes.
Cook fettucini according to package directions.
Add fettucini.
Pour into a large, greased casserole. Top with remaining Velveeta cheese and sprinkle with Parmesan cheese.
Bake at 350° for 15 to 20 minutes or microwave just until it is heated and cheese is melted.
