Cranberry Spice Cake
Cranberry Spice Cake is an moderately easy dinner. Made with 1 3/4 c. all-purpose flour, 1 tsp. baking powder, 1 tsp. cinnamon, 1/2 tsp. baking soda and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine flour, baking powder, cinnamon, soda and salt.
Beat together shortening and sugar at medium speed in an electric mixer about 3 minutes.
Add eggs, one at a time, beating well after each addition.
Gradually add dry ingredients, mixing well after each addition.
Fold in 1 cup cranberry sauce, raisins and nuts; spoon into well-greased 9-cup Bundt pan.
Bake in moderate oven (350Β°) for about 1 hour or until wooden pick in center comes out clean. Cool 10 minutes; remove from pan, inverting on wire rack.
Heat remaining cranberry sauce and dash of cinnamon in small saucepan. Pour warm sauce over cooled cake.
Yield
1 (9-inch) Bundt cake.
