Cranberry-Orange Nut Bread
Cranberry-Orange Nut Bread is an moderately easy dinner. Made with 1 1/2 c. all-purpose flour, 1 tsp. baking powder, 1/4 tsp. salt, 1/4 c. butter or margarine (preferably unsalted), softened and 1/2 c. granulated sugar, this recipe delivers authentic, satisfying flavors. Heat oven to 350Β°; grease and flour loaf pan.
In small bowl, stir flour, baking powder and salt to mix well; set aside.
In large bowl with electric mixer at medium speed, beat butter and sugar until light and fluffy; beat eggs, orange juice and orange peel in thoroughly.
Reduce speed to low; beat in flour mixture just until blended.
Fold in cranberries and walnuts.
Spoon into prepared pan; bake 30 to 40 minutes until toothpick comes out clean.
Remove to wire rack; cool completely.
