Cranberry Nut Bread
Cranberry Nut Bread is an moderately easy dinner. Made with 2 c. sifted flour, 1 1/2 tsp. baking powder, 1 tsp. salt, 1/2 tsp. baking soda and 1 egg or 2 egg whites, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 350Β°.
9 x 5 x 3-inch loaf pan. Sift flour, baking powder, salt and baking soda into a mixing bowl and set aside.
Put egg, oil, orange juice, rind and sugar into blender container.
Process at mix speed until rind is finely grated.
Stop blender and add into flour mixture and mix by hand only moistened.
Into prepared pan and bake 50 to 60 minutes or until cake is done.
