Cranberry Gelatin Salad
Cranberry Gelatin Salad is an moderately easy dinner. Made with 1 (16 oz.) pkg. raspberry or cherry flavored gelatin, 1 c. boiling water, 1 (20 oz.) can crushed pineapple, drained, 1 1/2 tbsp. lemon juice and 1 (14 oz.) jar cranberry-orange relish, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Dissolve gelatin in 1 cup boiling water.
Add enough water to liquid from drained pineapple to make one cup.
Stir into gelatin mixture.
Add lemon juice.
Chill until slightly thickened.
Fold in pineapple, cranberry-orange relish, apples, pecans and celery. Chill 24 hours before serving.
Makes 8 servings (no cholesterol).
