Cranberry Fruit Salad
Cranberry Fruit Salad is an moderately easy dinner. Made with 1 (8 oz.) can crushed pineapple, drained, 1 (3 oz.) pkg. jell-o (raspberry), 1 c. celery, 1/2 c. nuts, chopped and 1 c. apple, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Drain pineapple; reserve juice.
Add enough water to juice to measure 1 cup (including lemon juice).
Heat liquid to boil.
Stir in Jell-O.
Break up cranberry sauce with fork and stir into Jell-O mixture.
Refrigerate until Jell-O begins to thicken.
Stir in pineapple, nuts, apples and celery.
Pour into 4-cup mold. Chill until firm.
Serves 8.
