Cran-Waldorf Salad
Cran-Waldorf Salad is an moderately easy dinner. Made with 2 c. cranberry juice, 1 small box lemon gelatin, 1/4 tsp. salt, 1 c. chopped unpared apple and 1/2 c. chopped celery, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Heat 1 cup cranberry juice to boiling in a small pan.
Add gelatin to dissolve.
Add the remaining juice and the salt. Chill until partially set.
Stir in apple, celery and nuts.
Pour into individual molds or loaf pan that has been oiled.
Unmold onto pineapple slices and top with a teaspoon of mayonnaise.
