Crabmeat Soufflé
Crabmeat Soufflé is an moderately easy dinner. Made with 12 slices bread, crust cut off, 6 slices cheese, 2 c. crabmeat, 1 tbsp. chopped onion and 4 eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Place 6 slices of bread in bottom of 9 x 13-inch pan, which has been greased.
Cover bread with slices of cheese, spread with crabmeat, and sprinkle with onion.
Beat eggs, milk, salt and pepper.
Lay other 6 slices of bread on top of crabmeat, etc. (like a sandwich).
Pour egg and milk mixture over all.
Make sure bread is moistened.
Chill in refrigerator for 2 hours or more. Bake in 350° oven for 30 minutes until browned and puffy.
