Crabmeat Au Gratin
Crabmeat Au Gratin is an moderately easy dinner. Made with 1 stalk celery, chopped fine, 1 c. onion, chopped fine, 1/4 c. butter, 1/2 c. all-purpose flour and 1 (13 oz.) can evaporated milk, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Preheat oven to 375°.
In large skillet over medium heat, saute celery and onions in butter until wilted.
Blend in flour well with mixture.
When well blended, pour in milk gradually, stirring constantly.
Add egg yolks, salt, red pepper and black pepper and cook for 5 minutes.
Place crabmeat in bowl for mixing; pour the cooked sauce over crabmeat.
Blend together well. Transfer into lightly greased 2-quart shallow casserole or 6 individual ramekins and sprinkle with grated Cheddar cheese.
Bake at 375° for 10 to 15 minutes or until light brown.
Serve at once. Serves 6.
