Crab Au Gratin
Crab Au Gratin is an moderately easy dinner. Made with 1 lb. lump or backfin crabmeat, 2 tbsp. chopped onion, 3 tbsp. butter, 2 tbsp. flour and 1 1/4 c. milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Pick through crab to remove shell.
Put it in a 2-quart casserole dish and set aside.
Saute onion in butter.
Remove from heat and add flour.
Set back on heat and add milk immediately. Stir constantly until mixture thickens and comes to a boil.
Add shredded cheese and stir quickly until it melts.
Remove from heat.
Salt and pepper to taste.
Gently mix it with crabmeat in the casserole dish.
(Top with buttered bread crumbs.)
Bake at 325Β° for 30 to 45 minutes or until hot and bubbly.
Can sprinkle with paprika before baking.
