Cowboy Stew
Cowboy Stew is an moderately easy dinner. Made with 6 slices bacon, cooked, 1 c. chopped onion, 1/2 tsp. garlic salt, 1/2 c. chopped bell pepper and 2 c. diced potatoes (cooked separately), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook potatoes enough water to cover. Reserve water and add tomato juice.
Fry bacon until crisp, drain and crumble. In bacon grease, saute onions and green pepper. Brown beef, then rinse and drain.
Add remaining ingredients and simmer approximately 30 minutes.
Freezes well.
