Cowboy Quiche
Cowboy Quiche is an easy dinner. Made with 5 cans whole green chilies, seeded, 28 oz. monterey jack cheese, grated, 5 eggs, beaten, 1 (13 oz.) can evaporated milk and 1 tbsp. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Lightly grease the bottom of a 9 x 13-inch pan.
Layer ingredients in following order in bottom of pan
1/2 of the chilies, 1/2 of the grated cheese, remaining chilies, remaining cheese. Beat eggs, flour and milk together.
Season to taste with salt and pepper.
Pour egg mixture over cheese and chilies. Bake 30 to 35 minutes at 350Β°.
Allow quiche to set for 20 minutes before serving.
