Cowboy Casserole
Cowboy Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 3 tbsp. shortening, 1 clove garlic, 2 1/2 tsp. salt and 1 1/4 c. minced onion, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook ground beef in fat until lightly browned.
On cutting board, thinly slice garlic.
Sprinkle with salt and mash thoroughly to pulp.
Add to beef with onion, green pepper and chili powder.
Cook 5 minutes.
Remove from heat and add tomatoes. Combine rice and kidney beans in 2-quart casserole.
Add hot beef mixture.
Bake, uncovered, for 1 hour in a 350Β° oven.
