Cowboy Cake
Cowboy Cake is an moderately easy dinner. Made with 2 1/2 c. flour, 2 c. brown sugar, 1/2 tsp. salt, 2/3 c. shortening and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Sift flour.
Add sugar, salt and shortening.
Rub into fine crumbs.
Reserve 1/2 cup of mixture to sprinkle over the top.
To the remaining crumbs, add baking powder, soda and spices.
Mix thoroughly.
Add eggs to the sour milk and stir into the dry mixture; beat until smooth.
Pour into greased pan and sprinkle crumbs over top.
Sprinkle an additional 1 teaspoon cinnamon.
Top with chopped nuts (optional).
Bake at 350Β° in large cake pan until done.
Great with chili.
