Court Bouillon
Court Bouillon is an moderately easy dinner. Made with 1/3 c. oil, 1 lb. raw fish fillets, 1 large onion, chopped, 1 bell pepper, chopped and 1/2 c. green onion, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Brown flour in oil.
Add onion, bell pepper and green onion and saute.
Add tomatoes, tomato sauce, 2 cups water, salt and pepper.
Heat mixture throughout.
Add fish cut into 2-inch squares and stir only once!
Stirring will break the fish.
Serve over rice.
