Country Rye Bread
Country Rye Bread is an moderately easy dinner. Made with 4 to 4 1/2 c. bread flour, 2 pkg. active dry yeast, 1 1/2 tsp. salt, 2 tbsp. vegetable oil and 1 egg white, lightly beaten with 1 tbsp. water, this recipe delivers authentic, satisfying flavors. In large bowl, combine 2 cups all-purpose flour or bread flour, sugar, undissolved yeast, caraway seed and salt.
Gradually add water and oil; beat for 2 minutes on medium speed.
Scrape bowl occasionally.
Add 1/2 cup flour; beat 2 minutes on high, scraping bowl.
Stir in rye flour and enough all-purpose flour to make soft dough.
Knead on a floured surface until smooth and elastic (6 to 8 minutes).
