Country Potato Cheese Soup
Country Potato Cheese Soup is an moderately easy dinner. Made with 2 tbsp. butter, 6 large potatoes, diced, 2 medium onions, chopped, 3 stalks celery, chopped and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
In a large saucepan, saute vegetables in butter for 5 minutes. Add chicken broth, salt and pepper. Cover and simmer until vegetables are tender.
Put mixture in blender and blend until smooth.
Return mixture to saucepan to heat. Stir in half and half. Add cheese. Heat until cheese is melted.
Makes 2 quarts.
